Looking for a quick, easy and delish slow-cooker coconut pumpkin soup to warm up the soul on a cold winters day? I got you!
Look, I’ll be the first to admit that I’m not the best cook. In fact, my husband is the masterchef of the house. He seems to have this natural ability of being able to take anything and whip up the most delicious, five-star meal.
But, being the very supportive husband that he is, he encourages me to explore my cooking abilities. I’m happy to say that I have a few tricks up my sleeve when it comes to making a mean (usually vegetarian or vegan) meal. So one day, when an ex-tropical cyclone decided to say ‘Hi’ to us here in Perth (and my husband was very hung over!) I decided to make a warming and soothing Coconut Pumpkin soup. It was quick, easy and more importantly, it was delish!
Now I’m not much of a recipe follower, I tend to go with feel and what I like more than what the recipe tells me to do (bit of a rebel like that!). I don’t enjoy chili much, so in this recipe I only put a little bit in. But if chili is your jam, put more in!
What you’ll need:
- 500g Butternut Pumpkin, chopped
- 4-5 carrots, chopped
- 3 medium potatoes, chopped
- 1L vegetable stock
- 1 tablespoon curry powder
- pinch of chili powder (put as much in as you like)
- 2 teaspoons cumin powder (or more, you decide)
- 400ml coconut milk
How to create the magic:
Pretty simple really – chop up all the vegetables and put them into the slow cooker. Add in the vegetable stock, the curry powder, chili powder, cumin powder and let it cook slowly for 4 to 6 hours.
Then when everything looks soft and it’s smelling absolutely delightful, you can either add in the coconut milk and let it cook for a few more minutes (maybe 10 mins) or you can do what I did and just put everything into the blender, add the coconut milk and then blend.
I then got a wee bit fancy and grabbed some small tortillas, heated up some garlic and oil in a pan and quickly fried them to make dipping ‘bread’ for the soup. Or feel free to make some toast – this is your soup after all!
